1/2 cup shelled young fresh fava beans (about 8 ounces before shelling) or 1/2 cup cooked dried fava beans In a skillet heat the olive oil over medium heat. Add the fava beans and saute them for 2 minutes. Add the corn, and saute 2 minutes more. Then add the tomatoe, salt and pper, and toss well. Serve the succotash right away. Serves 2
2 tablespoons olive oil
1 cup fresh corn kernels
1 ripe tomatoe, cut into 1/2 inch pieces Salt and fresh-ground black pepper to taste
optional: Add 1 tablespoon of chopped fresh dill just before serving
